Well, now that I am eating keto, I realize I can’t munch on these sweet eggs of goodness any longer. If you’ve had this conversation with yourself, know that you aren’t alone. While many of the friends and family members I have don’t eat low carb, I still volunteer to bring a keto dessert for parties. They have become accustomed to me, bringing a dessert that is low carb and has even started loving the desserts too. They always thought they wouldn’t like them simply because it’s called “low carb” or “keto.” I have shown them that there are so many delicious options out there that are much healthier versions but still meet your cravings and needs.
Can You Eat Peanut Butter on Keto?
I know it might surprise you, but you CAN eat peanut butter on keto. The biggest thing you need to be doing when you are shopping for peanut butter is reading the labels. You need to choose a peanut butter that has just peanuts and maybe a little bit of salt: no added sugars or other added ingredients. You will need to make sure that the amount you are eating fits into your macros, and you will be good to go.
How to Store Homemade Peanut Butter Eggs
After the homemade peanut butter eggs are done, and they have been able to set up, place them inside of a food storage container. You will need to keep them airtight. You can either store the peanut butter eggs in the refrigerator or in your pantry. Both are good, but my personal preference is to eat them cold. I love the flavor when they have been chilled in the fridge for a while. They will last up to a week if refrigerated and are great when you are meal prepping too.
Can You Freeze Keto Peanut Butter Eggs
Yes, you can easily freeze these keto peanut butter eggs. Place all of the eggs on a baking sheet that has been lined with parchment paper in the freezer. Leave the peanut butter eggs in the freezer for 2-3 hours. After that, take the eggs and remove them off of the baking pan and put them in a freezer bag or plastic container. They will last 2 – 3 months in the freezer. To serve, simply remove from the freezer and let them thaw for a minute or two then indulge.

How to Make Sugar Free Peanut Butter Easter Eggs
These peanut butter eggs are so EASY, and you are going to be very glad that you learned how to make them. I am so excited to teach you how to make them on your own. Let’s get started:
1. Using a microwave-safe bowl, you’ll need to combine the peanut butter and butter. Warm the mixture with 15-second intervals until the butter is melted and the mixture is well combined.
2. Then add the peanut butter mixture into a mixing bowl. Pour in the sugar substitute, vanilla extract, and almond flour. Continue to beat on high until a peanut butter dough has formed.
3. Next, you will need to form the peanut butter dough into 15 even-sized balls. Flatten each one a little bit.
4. Use your hands to form the dough balls into the shape of small flattened eggs. You want them to look like an egg shape, just like typical eggs.
5. Place each of the eggs on a parchment or silicone mat lined baking sheet. Place the peanut butter eggs into the freezer to chill for one hour.
6. Put the baking chips and coconut oil into a microwave-safe bowl, and heat at 30-second intervals until melted and combined.
7. You’ll need to dip the peanut butter eggs into the chocolate mixture and place back on the baking sheet.
