This cheesy keto casserole will be a “go-to” meal on the menu for your family because it is super delicious and super easy to make and since it’s packed with nutrients, no need to feel guilty serving it up again and again! Your family will ask for this Keto Cheesy Chicken and Spinach Casserole over and over.
How To Make Keto Cheesy Chicken and Spinach Casserole:
Step One: Set your oven to 350 degrees
Step Two: In a large skillet heat 1 tbsp olive oil over medium heat
Step Three: Cook Spinach in the skillet (a little at a time) until it is wilted
Step Four: Remove Spinach from Skillet and Drain it well. Add the spinach to the bottom of a greased baking dish
Step Five: Melt 2 tbsp of butter in the skillet you cooked your spinach in
Step Six: Add the heavy whipping cream to your skillet and using a whisk add the Parmesan cheese, garlic powder, and basil
Step Seven: Add the Mozzarella cheese and salt and pepper to taste
Step Eight: Add the Shredded Chicken to the cheese mixture
Step Nine: Spread evenly, in the baking dish, the cheesy chicken mixture over the spinach mixture
Step Ten: Sprinkle Mozzarella cheese over the mixture in the baking dish
Step Eleven: Place the baking dish in the preheated oven for 20-25 minutes or until the cheese is browned and bubbly
Step Twelve: Serve this Keto Cheesy Chicken and Spinach Casserole sprinkled with parsley

Can I Substitute Other Cuts of Chicken in This Keto Casserole?
Yes, you can substitute boneless, skinless chicken thighs in place of chicken breasts in this Keto Cheesy Chicken Casserole. You can also use canned chicken that will make your prep time a lot less and still be very healthy and delicious. You can also prepare your shredded chicken ahead of time and portion and freeze it for up to 3 months in vacuum-sealed bags.
Can I Use Frozen Spinach in Place Of Fresh Spinach?
You can use frozen spinach in this Cheesy Chicken and Spinach Casserole. If you are using frozen spinach, thaw it ahead of time and squeeze excess moisture out of the blanched spinach and place it in the bottom of the baking dish.
Can I Freeze Keto Cheesy Chicken and Spinach Casserole?
Yes, you can portion and freeze this keto casserole for up to a month. This will make for quick delicious meals in a pinch. If you need lunch for your kids to take to school or a quick lunch to reheat in the microwave at work. This is perfect.

Ingredients
- 10 oz. Fresh spinach
- 1 tbsp Olive oil
- 2 tbsp Butter unsalted
- 1 ½ c. Heavy whipping cream
- ¾ c. Parmesan cheese
- 1 tsp Garlic powder
- 1 tsp Basil
- 1 lb. Shredded chicken
- ½ c. Mozzarella cheese + a bit more for topping
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 350 degrees.
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add the spinach to the heated skillet a little at a time, and cook until wilted.
- Drain the spinach, and spread it on the bottom of a greased baking dish.
- In the same skillet, melt 2 tbsp of butter.
- Pour in the heavy whipping cream.
- Whisk in the Parmesan cheese, garlic powder and basil.
- Stir in the mozzarella cheese.
- Add salt and pepper to taste.
- Mix in the shredded chicken.
- Spread the chicken mixture evenly over the spinach in the baking dish.
- Top with a thin layer of Mozzarella cheese.
- Bake for 20-25 minutes until the cheese is browned and bubbly.
- Garnish with freshly chopped parsley and serve.
