However, I believe you should not have to sacrifice all the good things you love to be healthy. Just because you are trying to reduce carbs and adapt to a diet doesn’t mean you should have to give up all the traditional breakfast foods such as pancakes.
Thus, I created this scrumptious Easy Pancake recipe that you are sure to love and will not disappoint your taste buds.
I was pleasantly surprised with the outcome of this breakfast dish – and so was the rest of my family. While these will be a bit denser than your regular pancake mix, the coconut flour does keep them a bit fluffy and light.
The most important thing when serving these easy pancakes is to remember to take care that your toppings are friendly. You don’t want to put all of the extra efforts into making pancakes and then cover them while carb-heavy syrup.
Sunday breakfasts used to be a big thing in my home when I was growing up, so it’s a tradition I try to keep with my family. These pancakes are now part of it. I also like to make extra pancakes so that I can freeze them and enjoy them throughout the week as an easy breakfast any morning.
This recipe is an alternative to the traditional carb filled pancakes we all grew up with. These pancakes will not disappoint you or your family and will make every breakfast a hit. Once you make them, you’ll want them all the time!
How To Make Easy Pancakes:
Step One: Mix together the softened cream cheese and eggs in a mixing bowl – Beat cream cheese and egg mixture until smooth and creamy
Step Two: Add the coconut flour, vanilla and baking powder to the cream cheese and egg mixtures in the bowl and mix all ingredients then set aside for a few minutes to thicken
Step Three: Heat a non-stick skillet over medium heat – add grease or butter to the skillet
Step Four: Pour ¼ cup of batter into a heated and greased non-stick skillet
Step Five: Cook the pancakes for a few minutes on one side and then flipping it and then cooking an additional few minutes on other side or until golden brown
Step Six: Repeat Step Five until you have used all your remaining batter have a delicious stack of pancakes.
Step Seven: Top your pancakes with fresh fruit, low carb syrup, or any other topping you may like.

What Things Can I Top My Easy Pancakes With?
My personal favorite is butter and cinnamon. Even before the low carb trend, this was one of my favorite toppings. You can also toss a few of some lowish- carb fruits like strawberries, raspberries, or blueberries or if you are feeling adventurous you can make your fruit own syrups. You can also melt a bit of peanut butter to drizzle on your pancakes. Toasted coconut and bacon are some other options.
Can I Freeze These Pancakes?
You can freeze these easy pancakes for up to a month. Just pull them from the freezer and thaw a bit and pop them in the toaster over to reheat. You can also pop them in the microwave for a few minutes and serve. These pancakes can make a quick breakfast option in a pinch.
What Are Some Variations for the Pancake recipe?
You can toss a few blueberries, toasted unsweetened coconut, few pieces of diced up peaches, or few pieces of diced up mango in the batter before frying the pancakes. You can also add some bacon to the batter and top with avocado to give it a whole different flavor profile.

- 2 oz Cream cheese softened
- 2 Eggs
- 1 tsp Vanilla extract
