Seafood Loaded Potato Pan

When I was a little girl, my mom would make this amazing seafood loaded potato pan. She’d start with a layer of sliced potatoes in the bottom of a baking dish, then top it with a mixture of sautéed shrimp, scallops, and crab meat. She’d bake it until the potatoes were nice and crispy, and the seafood was cooked through. It was always so delicious! Even now, as an adult, I still love to eat this dish.

The potatoes are fried until crispy and then loaded with fresh, succulent seafood. The combination of flavors and textures makes this dish a must-try for anyone visiting the diner.

Ingredients

  • Fresh shrimp
  • Red potatoes
  • Yellow onion
  • Crawfish boil seasoning
  • Cajun Spice
  • Garlic Powder

Sauce:

  • Cream of Mushroom Soup
  • Cubed pieces of Velveeta cheese
  • Skim milk
  • Fresh diced Roma tomatoes

How to make Seafood Loaded Potato Pan

Step 1. Preheat the oven to 400 degrees

Step 2. Prep large baking dish with nonstick baking spray.

Step 3. Whisk to combine the Crawfish boil seasoning, cajun spice, and garlic powder in a bowl. Put red potatoes and sliced onions in the prepared baking dish.

Step 4. Season with 1⁄2 of the spice mix.

Step 5. Bake at 400 degrees for 15 minutes.

Step 6. Remove from oven.

Step 7. Add the shrimp and sausage.

Step 8. Season with the remaining 1⁄2 cup of the spice mix.

Step 9. Mix to combine.

Step 10. Return to the oven at 400 degrees for 10 minutes.

Sauce Directions:

Step 1. Add the mushroom soup, Velveeta cheese, and milk in a pot over medium heat. Whisk to combine.

Step 2. Cook until the cheese has completely melted.

Step 3. Stir in the diced Roma tomatoes.

Step 4. Stir until combined.

Mixing the dish together

Step 1. Pour sauce and toss to combine.

Step 1. Return to the oven to bake for an additional 15 minutes.

  • 1 1 ⁄2 lb. peeled and deveined fresh shrimp 1 1⁄2 lb sliced pieces of smoked sausage 1 1⁄2 lb cut quarters of red potatoes
  • 1 ⁄2 large yellow onion cut into wedges
  • 1 ⁄2 cup Crawfish boil seasoning
  • 2 Tbsp Cajun Spice
  • 1 Tbsp Garlic Powder
