Seafood Loaded Potato Pan

Ingredients
  

  • 1 1 ⁄2 lb. peeled and deveined fresh shrimp 1 1⁄2 lb sliced pieces of smoked sausage 1 1⁄2 lb cut quarters of red potatoes
  • 1 ⁄2 large yellow onion cut into wedges
  • 1 ⁄2 cup Crawfish boil seasoning
  • 2 Tbsp Cajun Spice
  • 1 Tbsp Garlic Powder
Sauce:
  • 1 can Cream of Mushroom Soup
  • 1 cup cubed pieces of Velveeta cheese 1⁄3 cup Skim milk
  • 2 fresh diced Roma tomatoes

Method
 

  1. Preheat oven to 400 degrees
  2. Prep large baking dish with nonstick baking spray.
  3. Whisk to combine the Crawfish boil seasoning, cajun spice, and garlic powder in a bowl. Put red potatoes and sliced onions in the prepared baking dish.
  4. Season with 1⁄2 of the spice mix.
  5. Bake at 400 degrees for 15 minutes.
  6. Remove from oven.
  7. Add the shrimp and sausage.
  8. Season with the remaining 1⁄2 cup of spice mix.
  9. Mix to combine.
  10. Return to the oven at 400 degrees for 10 minutes.
Sauce Directions:
  1. Add the mushroom soup, Velveeta cheese, and milk in a pot over medium heat. Whisk to combine.
  2. Cook until the cheese has completely melted.
  3. Stir in the diced Roma tomatoes.
  4. Stir until combined.
Mixing all together
  1. Pour sauce and toss to combine.
  2. Return to oven to bake for an additional 15 minutes.
  3. Garnish with chopped parsley.
