These Breakfast Pancakes are going to become a breakfast staple in your home! Serve with eggs and bacon for a hearty, balanced and delicious keto breakfast!

Ingredients
  

  • 2 oz Cream cheese softened
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1 tbsp Coconut flour
  • ½ tsp Baking powder

Instructions
 

  • In a mixing bowl, combine the softened cream cheese and eggs. Beat until smooth and creamy.
  • Add in the coconut flour, vanilla and baking powder. Stir to combine, and let sit for a minute or two to thicken.
  • Pour the batter by the ¼ cup into a greased non-stick skillet, and cook the pancakes for 1-2 minutes on one side, flip, and cook for an additional minute on the other side.
  • Repeat step 3 until you have made all four of your pancakes. Top with fresh fruit, your favorite low carb syrup or other toppings of your choice.
