Healthy and delicious, count me in! This is the appetizer to take to a potluck.

Bursting with color, and still getting you and your guests your daily dose of health.

This Cucumber Bites Recipe comes together in a flash and requires very few components. Making them perfect for potlucks or simply an afternoon snack for the kids when they get home from school. If your kids have friends over you can even let them be the ones to put the recipe together. An interactive way to get them to have some fun with healthy food, what more can you ask for?

These little bites are so something you’ll never feel bad about eating a ton of them. Why? They are just cucumbers and some toppings! Instead of bringing some heavy dish that is going to leave everyone with a full stomach bring the appetizer that can set the tone easy and light.

How else can I spice up the recipe? 

I love a little extra pizzazz! You can very easily sprinkle some paprika or cayenne on top to create a little kick to these bites. You could even create a tray with 5-10 of each interpretation. 5 with just salt and pepper, 5 with some herbs on top, 5 with paprika, and 5 deluxe with all the fixings. 

What is the best way to keep these crisp and fresh?

Make these last things before your event begins or store them in the fridge. We do not recommend making them any earlier than the day of or unless you use very fresh cucumbers because we want to make sure they have a nice crunch when you serve them. Serve your Cucumber Bites by adding the bowl to an ice bath or bowl of ice to preserve the freshness.

How do I perfect the ranch and cream cheese dressing on top?

PRO TIP! Use powdered ranch dressing mix, not an actual bottle of Ranch dressing. Otherwise, things are going to get wet and sloppy really quickly. Keep the ranch part of the mix dry so that the cream cheese can do the work.

Here are the ingredients you need for the Cucumber Bites. 

4 oz. Cream cheese

2 Tbsp. Fresh dill chopped

¼ C. Ranch dressing

3 Cucumbers cut into 1 inch sliced

15 Cherry tomatoes sliced in half lengthwise

Salt and pepper to taste

Let’s create these delectable snacks!

Cut the cucumbers into 1-inch slices. Use a melon baller to spoon out a half-moon shape from the top of each cucumber slice.

In a bowl, blend together the cream cheese, ranch dressing, dill, and salt and pepper to taste until smooth and creamy.

Pipe some of the cream cheese mixture into the empty section of each cucumber slice.

Place a half slice of cherry tomato in the center of each cucumber bite and serve.
