Method
- Cut the cucumbers into 1 inch slices. Use a melon baller to spoon out a half moon shape from the top of each cucumber slice.
- In a bowl, blend together the cream cheese, ranch dressing, dill and salt and pepper to taste until smooth and creamy.
- Pipe some of the cream cheese mixture into the empty section of each cucumber slice.
- Place a half slice of cherry tomato in the center of each cucumber bite and serve.
