Walking Taco Casserole

When you think of tacos, what is the first thing that comes to mind besides the glorious flavors? Well, if you ever watch travel food shows like us, then you have certainly seen how mobile this dish has become around the world. For the most part, people in the states enjoy this recipe at a restaurant or in the comfort of their home, but what if we told you that you could take your taco on the go like you see on youtube?

For this reason, we created a recipe that is simple, and also easy to take with you on your busy days or running to work, practice, the grocery store, and all the other errands you make in a day. 

Without further ado, we want to introduce you to the Walking Taco Casserole!

In brief, this title says it all, right? You can take your casserole anywhere while also enjoying the spicy flavors of traditional tacos without the mess of trying to keep the filling in the shell and out of your car’s seat. 

In addition, your Walking Taco Casserole is ready to serve and enjoy in under 45 minutes with plenty of leftovers to go around for the whole family. 

To summarize and highlight some of our favorite ingredients; we included ground beef, taco seasoning, tomato, Frito corn chips, Mexican cheese, onion, and more. 

Yes, you read that right; those thick corn tortilla chips we all enjoyed as kids are mixed into this dish for the crunch of a taco shell without all the mess. 

When should I add the salsa and sour cream for peak freshness?

As delicious as this recipe is; it is not meant to be stored with all the ingredients for numerous days on end. If you are baking this for yourself or a small family then it is best to only add the chips, lettuce, sour cream, and salsa fresh each time you serve it. The chips can become soft and mushy if left in the mixture for too long. 

Ingredients

1 ½ lbs. Ground beef

1 C. Onion chopped

3 oz. Cream cheese

1 Packet taco seasoning

1 Can green chilis

2-3 C. Fritos corn chips

1 C. Shredded taco blend cheese

1 Roma tomato chopped

1-2 C. Shredded lettuce

Salsa and sour cream for garnish

Step by Step Instructions

Preheat the oven to 350 degrees.

Place the ground beef and onion in an oven-safe skillet over medium-high heat on the stove. Saute until the meat is browned and the onions have softened.

Add the taco seasoning, green chilis, and cream cheese to the skillet, and saute until the cream cheese is completely melted and combined.

Top the mixture with the corn chips and then the shredded cheese.

Bake for 20 minutes.

Remove the skillet from the oven and top with shredded lettuce and tomato.

Garnish with salsa and sour cream if desired.

Ingredients
  

  • 1 ½ lbs. Ground beef
