Generally, when we think of twice-baked potatoes; our minds go to those delicious round potatoes opened up and filled with a ton of wonderful toppings. However; this recipe changes the game up a little bit. Therefore; the Twice Baked Potato Casserole was born. Generally; this casserole is served as a side dish, but in fact; it can be used as your main entree if you have a large group coming to visit or just a big family to feed.
We included your all-time favorite toppings. Which include crunchy, crispy, and sweet crushed pieces of bacon, creamy sour cream, fresh chives, and two different types of cheeses; mozzarella cheese and sharp cheddar cheese.
Can you really think of anything better? Whether you are taking this to a party or just indulging in some much-needed carbs on your cheat day. This Twice Baked Potato Casserole makes any of these occasions simply because you don’t have to put so much effort into making your dish. No dirtying up multiple pans, or utensils from the kitchen. Just a few steps and you are on the way to the comfort meal you deserve.
What is the easiest way to get the sour cream into the squeeze bottle?
This step can become slightly tricky; however, it will make sense in the end. There are two ways you can do this easily to ensure a mess is not made. Firstly, leave your sour cream out for a bit at room temperature to ensure that it is a little more creamy and you can squeeze it right into your bottle. Secondly, you can use a funnel if you do not have a squeeze bottle of sour cream and then press it down into the bottle with a spoon or knife. Both of these options work best with the squeeze tube of sour cream, but if you don’t have one; then definitely use a funnel.
Ingredients Needed
5 LBS of Yukon Gold potatoes, baked
1/2 tsp kosher salt
1/2 tsp ground black pepper
2 LBS thick cut bacon, cooked and chopped
2 C sour cream
2 C Mozzarella Cheese, shredded
2 C Sharp Cheddar Cheese, shredded
4 Green onions, chopped
1 Squeeze bottle
Instructions
Pour the sour cream into the squeeze bottle.
Preheat the oven to 350 degrees and grease a 9×13 baking pan with cooking spray, set aside.
Cut the baked potatoes into bite-size pieces.
Place half of the cut potatoes onto the bottom layer of the baking pan and then sprinkle with salt and pepper.

Add half of the chopped cooked bacon onto the top of the potatoes.
Drizzle the sour cream over the bacon, it won’t fully cover it all, and that is ok.
Sprinkle half of the Cheddar cheese and Mozzarella Cheese on top of the potato casserole.
Layer the last layer of potatoes on top of a bit more cheese.

Cover with foil and place into the oven and bake for 30 minutes
Remove the potato casserole from the oven and allow to cool slightly, Serve hot and enjoy!
