Delicious egg noodles perfectly soak up all your wonderful spices and hold the flavor and texture perfectly. They won’t dry out or become hard but are nice and smooth.
Is there a certain type of cheese that works best?
We always recommend shredded cheese as it melts perfectly and evenly to coat the entire casserole. You can even use a nacho cheese or Velveeta if you are a cheese lover and looking for extra creaminess. If you do go with either one of these options then you will have more cheese throughout the dish so just make sure everyone joining the party is a cheese lover.
What type of taco seasoning do you recommend?
Our favorite is Old El Paso, the infamous taco bell, or Ortega seasoning. You can use any that you prefer because you all have very similar flavor profiles. If you are feeling adventurous you could even whip up your own if you have the ingredients in your cabinet. There are tons of recipes so just do a search to find one that sounds tasty to you.
Ingredients
3 ½ C. Cooked egg noodles
1 lb. Ground beef
15 oz. Can of corn drained
1 C. Salsa
¼ C. Sliced black olives
¼ C. Taco sauce
15 oz. Can kidney beans be rinsed and drained well
1 Pack of taco seasoning
½ C. Tomato sauce
Shredded cheddar cheese (optional)
Instructions for your Throw Together Mexican Casserole
Preheat the oven to 350 degrees.
Add the ground beef to a skillet over medium-high heat and cook until browned. Drain any excess fat.

Place the taco seasoning, taco sauce, salsa, olives, corn, beans, and tomato sauce into the skillet with the meat and stir to combine.

Layer the mixture into a well-greased 9×13 baking dish and top with shredded cheese if desired.
