Salad:
3 cup Cooked Chicken (Cooled And Diced)
1 Bag Chopped Romaine Lettuce
1 cup Cherry Tomatoes (Sliced)
1 English Seedless Cucumber (Sliced)
1 can Corn (Drained)
5 Green Onions (Sliced)
1 can (15 oz) Black Beans (Drained And Rinsed)
½ cup Sharp Colby Jack Cheese (Shredded)
¼ cup Fresh Cilantro (Chopped)
Lime Juice (½ Lime)
Dressing:
1 cup Ranch Dressing (Lo-Fat)
1 Packet (1 oz) Taco Seasoning (2 Tbsp)
Garnish:
½ cup Tortilla Strips Salad
Topping Extra Cilantro
Directions:
Salad:
Step 1. Add salad ingredients in a large bowl. (Reserve the lime juice.) Toss well.
Step 2. Pour the half cup of lime juice over the salad. Cover and put in the refrigerator.
Dressing:
Step 1. Whisk together the ranch dressing and taco seasoning.
Salad:
Step 1. Drizzle dressing over the salad. Toss the salad.
Step 2. Garnish with tortilla strips and chopped fresh cilantro.
