Ingredients
  

Salad:
  • 3 cup Cooked Chicken Cooled And Diced
  • 1 Bag Chopped Romaine Lettuce
  • 1 cup Cherry Tomatoes Sliced
  • 1 English Seedless Cucumber Sliced
  • 1 can Corn Drained
  • 5 Green Onions Sliced
  • 1 can 15 oz Black Beans (Drained And Rinsed)
  • ½ cup Sharp Colby Jack Cheese Shredded
  • ¼ cup Fresh Cilantro Chopped
  • Lime Juice ½ Lime
Dressing:
  • 1 cup Ranch Dressing Lo-Fat
  • 1 Packet 1 oz Taco Seasoning (2 Tbsp)
Garnish:
  • ½ cup Tortilla Strips Salad
  • Topping Extra Cilantro

Method
 

  1. Add salad ingredients in a large bowl. (Reserve the lime juice.) Toss well.
  2. Pour the half cup of lime juice over the salad. Cover and put in the refrigerator.
Dressing:
  1. Whisk together the ranch dressing and taco seasoning.
Salad:
  1. Drizzle dressing over the salad. Toss the salad.
  2. Garnish with tortilla strips and chopped fresh cilantro.
