I’ve been playing around with push-up pops today for Betty Crocker. I’ll admit to being terribly wary at first. I’m not a big fan of trendy-bizarre cake concoctions. Cake pops just never did it for me (they taste like wax lips). And homemade poptarts are really fun, but so much more exhausting to make than the real thing (and never that crunchy-hard frosting. Boo.)
So I was surprised this afternoon to discover that Push-Up Cupcakes, little layered cakes made in plastic push-up pop containers aren’t just the cutest things ever, they are actually surprisingly convenient. For one thing, you don’t need a PhD in aeronautics to assemble them. For another, they are the single more portable way to…er….port a cake around. Just whop those pretty littl epops in a box, or bag, or the front basket of your Vespa for that matter, and you don’t have to worry about spillage or slippage or squishing the frosting on the seat of your sassy new skinny jeans. Tres chic.
You can catch some of my breakfast pop ideas over at Babble this week, and two fun Halloween versions over at Betty Crocker next month, but in the meantime, why not whip up these splendid Snatch-and-Go Breakfast Pops, which are about the coolest way to serve breakfast. Think how perfect they’d be for a ladies brunch. Even better yet, hand them to your kids before school and watch the morning melt into magic.
I used mini muffins purchased at our local bake shop, but you could make homemade muffins, if you so please. Please just be sure you sprinkle the tops of them with some serious sparkling sugar, to catch the early morning rays of the sunshine. That sort of a thing should always be mandatory.
- 6 push-up pop containers
- 2 ½ cups your favorite yogurt
- ¾ cup granola
- ¾ cup raspberries or blueberries
- 6 mini muffins
- Spoon a small amount of yogurt into the bottom of your push-up pop container.
- Top with a sprinkle of granola, then a few fresh raspberries. Plop your mini muffin on top.
- To serve, stick the bottoms of each push-up pop carefully into a thick piece of styrofoam.
- Serve and enjoy!
