How To Make Ricotta and Spinach Baked Ham Rollups:
Step One: Set your oven on the broiler setting and allow to heat up to temperature.
Step Two: In a skillet over medium-high heat add 1 TBSP of olive oil and allow it to come to up to temperature.
Step Three: Place the spinach in the skillet and cook just until it is wilted. Remove it from the heat.
Step Four: Mix together the ricotta and mozzarella in a mixing bowl, add to the cheese mixture garlic powder and Italian seasoning. Mix to combine seasons throughout.
Step Five: Add the cooked spinach to the bowl with the cheese and seasoning mixture and stir to combine all ingredients evenly.
Step Six: Take two pieces of deli ham and lay them on the counter, overlapping the two pieces, add one spoonful of the cheese and spinach filling to the overlapping ham slices.
Step Seven: Spread the filling mixture evenly on the ham, roll the ham around the filling creating the stuffed ham rollup. Place the stuffed ham rollup on a baking sheet in a single layer.
Step Eight: Repeat steps six and seven until all the ham is gone.
Step Nine: Broil the Ricotta and Mozzarella Stuffed Ham Rollups for 5 minutes or until filling is melted and ham slightly browned.

- 20 Slices deli ham Look for varieties with 0 carbs and no added sugar
- ½ c. Ricotta
- 1 c. Mozzarella
- 1 tsp. Italian seasoning
- ½ tsp. Garlic powder
- 2-3 c. Spinach
- 1 tbsp. Olive oil
Instructions
- Heat up the oven on the broil function.
- Heat 1 tablespoons of olive oil in a skillet over medium heat.
- Add the spinach to the skillet and cook until just wilted.
- In a mixing bowl, combine the ricotta and mozzarella cheese.
- Add in the garlic powder and Italian seasoning.
- Mix in the cooked spinach. Stir until all of the ingredients are combined.
- On a counter, lay out two pieces of deli ham overlapping each other.
- Place a spoonful of the filling mixture onto the ham slices.
- Roll the ham around the filling forming it into a little stuffed ham rollup.
- Place the roll-ups in a single layer within a baking dish.
- Cook the ham rollups under the broiler for 5 minutes, or until the tops are browned and the insides are melted.
