Even though we are in the thick of summer, it is never too early to plan for the fall. Finding Halloween and fall decorations on a budget before everyone is running to the stores, stocking up on everything pumpkin flavored, and adding new recipes to your fall menu of snacks and desserts. Pecan Pie is a fall favorite and is most popular around September to October. It’s made with mixed nuts including pecan of course. The only problem with pie is it isn’t a very easy dessert to travel with. Whether everyone in the family is traveling to see friends or family, or just having people over your house to celebrate the chilly fall nights and carving pumpkins. Pie’s messy let’s be honest.

So we are super excited to introduce these Pecan Pie Balls that incorporate the same traditional flavors you love from a pecan pie without all the mess.

Pecan Pie Balls are a traditional Southern dessert usually served around the holiday season.  Our recipe makes about 30 bite-sized balls which will be gone in no time. You can make these ahead of time, chill, and serve when the time comes without having to worry about baking in your fancy clothes and messing up your make-up and hair while sweating it up in the kitchen.

Each Pecan Pie Ball has crushed pecans, brown sugar, maple syrup, graham cracker, vanilla, and rum extract. Then rolled in melted chocolate to create a hard shell and boom, a crunchy and sweet dessert ready to serve the masses.

What is rum extract?

This extract is used in a lot of cooking or baking recipes because it has a high rum flavor content without the alcohol. It’s traditionally used to flavor cakes and pastries to cut some of the sugary bases without having to cook down longer to remove the alcohol content.

Ingredients:

7 oz. Melting chocolate

2 ½ C. Chopped pecans

1 C. Graham cracker crumbs

1 C. Packed brown sugar

2-3 Tbsp. Maple syrup

¼ C. Water

1 tsp. Rum extract

1 ½ tsp. Vanilla extract

Instructions:

Add the pecans, brown sugar, and graham cracker crumbs to a mixing bowl, and stir to combine.

Mix the rum extract into the water, and add it to the mixing bowl along with the maple syrup. Stir to combine the mixture well until it clumps together easily when squeezed in your hand.

Form the mixture into 30 evenly sized balls and place into the freezer to chill on a parchment-lined baking sheet for 1 hour.

Heat the chocolate in a microwave-safe bowl at 30-second intervals until completely melted.

Dip the pecan pie balls into the chocolate, and return them to the parchment-lined baking sheet.

Chill again until the chocolate has set before serving.

Enjoy!
