One Pot Lasagna Soup

Lasagna is a recipe that is as old as time in one way or another. It originated in Italy and is made with freshly made pasta, hand-picked tomato, fresh cheese, and freshly picked herbs for a robust and sweet flavor that can’t be beaten. If you have ever made lasagna or tomato sauce from scratch; you know how time-consuming it can truly be. The sauce and pasta will be better than everything you can buy from the store, but your kitchen will be destroyed. Sauce all over the place, bowls, measuring utensils galore. What if we told you that you could have the delicious flavor of homemade lasagna wrapped into one dish and made in one pot?

Introducing our One-Pot Lasagna Soup is a hearty and comforting meal. The lasagna noodles are cooked in the soup and then baked with cheese and tomato sauce. With this recipe, you can have lasagna without the fuss of making a tray of lasagna noodles.

This One-Pot Lasagna Soup recipe is made in one pot, which makes it easier to clean up afterward. Using a large dutch oven, you can combine all the ingredients into one place without tearing apart your kitchen and trying to find the right size pan recommended by a certain recipe that you haven’t seen in over six months. 

We used two different types of meat to give you more depth in your sauce and flavor ground beef and spicy sausage.  Include your herbs, cheese, balsamic vinegarette, and every other ingredient and your family will be lining up for seconds. 

What sides go with this soup?

Lasagna goes hand in hand with garlic bread or breadsticks to soak up the hearty sauce. Cut the heaviness from your main course with a caesar salad as an appetizer while everyone gets seated and makes small talk while waiting for that One Pot Lasagna Soup to grace the center of the table. 

Can I substitute any ingredients?

If you are doing a fridge clean-up, use whatever you think would go well! Adding vegetables, or different types of cheese. Do not substitute too much on the main ingredients or it may not cook properly. 

Ingredients:

1 lb. Ground beef

1 lb. Ground Italian sausage

10 Lasagna noodles

1 Onion chopped

24 oz. Jar of pasta sauce

4 tsp. Minced garlic

8 C. Chicken broth

2 Tbsp. Tomato paste

14 oz. Can diced tomatoes

1 tsp. Sugar

2 tsp. Balsamic vinegar

2 tsp. Basil

1 tsp. Oregano

1 Bay leaf

Salt and pepper to taste

Instructions:

Add the ground beef, onion, and sausage to a large pot over medium-high heat, and cook until completely browned. Drain any excess fat. 

Return the pot to the stove, and mix in the garlic. Saute for 30 seconds. 

Pour in the pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, basil, oregano, bay leaf and salt and pepper to taste.

Cover and bring to a boil. 

Break the lasagna noodles into pieces, and place them in the pot. 

Reduce the heat to medium-low and cook until the noodles have softened. 

Top with parmesan cheese, mozzarella, or ricotta, and serve.

  • 1 lb. Ground beef
  • 1 lb. Ground Italian sausage
