If you are looking for a way to spice up your breakfast this recipe will be a hit. When trying to stick to a low carb or keto diet, you get tired of the same old eggs and bacon breakfast. These Keto Bacon and Egg bites will be a nice additional to your breakfast menu. They are super easy and delicious, and with the addition of avocado, you get added nutrition to boot. They are great for the whole family.
These little snacks are great for active families who are always on the go and do not have time for a big sit-down breakfast most days. They can be prepared the night before so you can just grab them and go! They are far better and more nutritious than the tradition grab and go breakfast items we are used too, like muffins or granola bars. They also keep you in line with your keto lifestyle without skimping on the taste. They satisfy your hunger as well as your cravings for hearty delicious food and keep you full for hours.
Every mother tries to figure out things to make for breakfast (or any meal for that matter) that give her kids the added nutrition of things such as avocados. Avocados are loaded with vitamins such as Vitamin K, Folate, Vitamin C, and Potassium. These Keto Bacon and Egg Bites are a perfect way to add essential vitamins to your kids’ diet.
Your kids will not even realize they are eating avocados with this recipe. They will say “thanks mom” when you give them breakfast snacks like these.
Though these Keto Egg and Bacon Bites are traditionally served as breakfast, I sometimes enjoy them as a keto snack in the afternoon. I find just one is enough to kick any afternoon cravings, provide me with a bit of energy, and keep me going until dinner time.
How To Make Keto Bacon and Bacon Bites:
Step One: Using a baking rack and baking sheet, put your 8 strips of bacon on the rack and bake for 10-15 minutes (or until crispy and brown) in a preheated oven set to 400 degrees.
Step Two: When bacon is cooked to crispy remove it from oven and reserve 1 TBSP of bacon grease from the bacon sheet.
Step Three: Add 4 hard-boiled eggs and ½ of ripe avocado to a mixing bowl. Using a fork smash the hard-boiled eggs and avocado until they are well crumbled and combined together.
Step Four: Stir in salt and pepper to taste, and reserved bacon grease to the egg/avocado mixture and combine until all ingredients are well blended.
Step Five: In a separate bowl, crumble the cooked bacon.
Step Six: Portion the egg/avocado mixture into 6 even portions and roll into 6 even balls.
Step Seven: Roll the 6 egg/avocado balls into the bowl with the crumbled bacon coating the outside of the balls.
Step Eight: Place the bacon covered egg balls on a plate or in an airtight container and put them in the refrigerator to at least 30 minutes or until the are firm.
Step Nine: Remove from refrigerator and serve!

How Long Can I Store These Keto Bacon and Egg Bites?
Because we are not adding any preservative items to these Bacon and Egg bites, they are only good for 24-48 hours in the refrigerator. They do not store well in the freezer. The avocado will get brown after a period of time and give get a little watery. It is best to eat them within 48 hours.
What Variations Can I Add to This Keto Egg Bites Recipe?
I love to add items such as green onions, fresh herbs, and cheese to these items. You can add almost anything that doesn’t add a bunch of moisture to the mix. Some of my personal favorites are capers, green onions, olives (all liquid drained off them), and chives. All these items just give you a boost in the flavor profile.

Keto Bacon and Egg Bites
Ingredients
- 4 Hard boiled eggs
- 8 Strips of bacon
- 1 tbsp Reserved bacon grease
- ½ Ripe avocado
- Salt and pepper to taste
Instructions
- Preheat the oven to 400 degrees.
- Place the 8 strips of bacon onto a baking rack on a baking sheet, and cook for 10-15 minutes until crispy. Reserve 1 tbsp of the bacon grease from the cooked bacon.
- In a mixing bowl, smash 4 hard boiled eggs with a fork until crumbled well.
- Add in ½ of a ripe avocado, and use the fork to incorporate the avocado into the eggs.
- Add salt and pepper to taste, as well as the reserved bacon grease to the egg mixture, and stir to combine well.
- Crumble the cooked bacon into a bowl.
- Roll the egg mixture into 6 even balls, and roll each one into the crumbled bacon pieces.
- Place the bacon and egg bites onto a plate, and place them in the fridge for at least 30 minutes to firm up. Serve, or store in an airtight container in the fridge.
