Is there breakfast as infamous as avocado toast? It is, supposedly, the reason that millennials cannot afford housing, according to the Australian news story that ran a few years back.
While I believe that’s a bit of an exaggeration, I can say that part of this keto avocado toast inspiration was my desire to no longer spend $10 on a piece of toast an avocado – if I could even find one made on keto bread. There are 3 parts to Keto Avocado Toast – the toast, the avocado, and the egg.
Avocado (in ration) and eggs naturally fall within the keto diet so the main thing in creating an avocado toast recipe was…well, the toast. This keto toast is made from a 90-second bread recipe, which is basically genius. Just a few ingredients in a microwave-safe bowl, mix, microwave for 90 seconds and bam, keto toast. It tastes best when fried until the outside is crispy and served warm, which makes it even more perfect for this keto avocado toast recipe.
I like to fry the toast after the eggs so that the bread absorbs some of the flavors in the pan, but if you’re short on time, you could fry up both simultaneously. Of course, if you already have a preferred keto bread, you can use that – just mash the avocado and fry the egg.
Now, let’s talk about all the variations of Keto Avocado Toast! The recipe below is basic – keto toast, avocado, egg, salt, and pepper. That’s all you need for a delicious, nutritious breakfast. BUT, there are a million ways to kick this recipe up a notch…
You can top keto avocado toast with other veggies, like tomato and spinach. One of my favorite additions is bean sprouts. A whole lot of nutrition and crunchy texture! You can also get creative with seasoning – add some cayenne pepper for a bit of spice or some garlic. Fresh basil or parsley. For a little extra protein, add some chicken, ham, or turkey. The possibilities are endless!
With a little creativity, you can take basic keto avocado toast from a simple breakfast to a simple but decadent lunch.
How To Make Keto Avocado Toast:
Step 1. Place 1 egg, butter, and dry ingredients in a microwave-safe bowl. Combine well. Microwave for 90 seconds. Remove and slice in half.
Step 2. Scoop the inside of an avocado into a small bowl. Salt and pepper to taste.
Step 3. Heat olive oil over medium heat. Fry the remaining two eggs to your liking. Remove and salt and pepper to taste.
Step 4. In the same pan, place the two slices of bread face down. Fry until the outside is crispy then remove.
Step 5. Top each slice of keto toast with half of the avocado mash and an egg.

You can prepare the eggs for your keto avocado toast however you’d like! I prefer them completely fried but you can serve them sunny side up or even scrambled.

All parts of this keto toast – the 90-second bread, eggs, and avocado – are all best when eaten fresh. Since this recipe comes together in just a few minutes, I recommend making it fresh and never reheating it.

Keto Avocado Toast
Ingredients
- 3 Eggs divided
- 1 tbsp Butter melted
- ½ tsp Baking powder
- 3 tbsp Almond flour
- ½ tsp Psyllium husk powder
- 1 Ripe avocado
- Salt and pepper to taste
- 1 tbsp Olive oil
Instructions
- Place 1 of the eggs, 1 tbsp of butter, baking powder, almond flour, psyllium husk powder and a pinch of salt into a small square shaped microwave safe container. Stir until well combined. Place the mixture into the microwave for 90 seconds. Remove, slice in half, and set aside.
- Empty the inside of an avocado into a small bowl, and mash it with the back of the tines of the fork. Add salt and pepper to taste.
- Heat 1 tbsp of olive oil in a skillet over medium-high heat. Lightly drop two eggs into the skillet, and fry them to your liking. Remove, and top with salt and pepper to taste.
- In the same skillet, place the two slices of bread you previously made face down. Fry them until the outside is crispy, and then remove.
- Top each slice of bread with half of the mashed avocado, and then with one of the fried eggs. Serve immediately.
