Keto Avocado Toast

This Keto Avocado Toast uses 90-second bread for an easy, filling, and nutritious breakfast you can whip together in 10 minutes or less!

Ingredients
  

  • 3 Eggs divided
  • 1 tbsp Butter melted
  • ½ tsp Baking powder
  • 3 tbsp Almond flour
  • ½ tsp Psyllium husk powder
  • 1 Ripe avocado
  • Salt and pepper to taste
  • 1 tbsp Olive oil

Method
 

  1. Place 1 of the eggs, 1 tbsp of butter, baking powder, almond flour, psyllium husk powder and a pinch of salt into a small square shaped microwave safe container. Stir until well combined. Place the mixture into the microwave for 90 seconds. Remove, slice in half, and set aside.
  2. Empty the inside of an avocado into a small bowl, and mash it with the back of the tines of the fork. Add salt and pepper to taste.
  3. Heat 1 tbsp of olive oil in a skillet over medium-high heat. Lightly drop two eggs into the skillet, and fry them to your liking. Remove, and top with salt and pepper to taste.
  4. In the same skillet, place the two slices of bread you previously made face down. Fry them until the outside is crispy, and then remove.
  5. Top each slice of bread with half of the mashed avocado, and then with one of the fried eggs. Serve immediately.
