Cowboy Casserole

Cowboy Casserole

Yields: 4-5 | Prep Time: 10 min | Cook Time: 30 min | Total Time: 40 min

Ingredients:

1 lb Extra Lean Beef 80 / 20

1 tbsp. Garlic (Minced)

1 lg Purple Onion (Diced)

1 15 oz Can Of Corn (Drained)

1 15oz Can Black Beans (Drained)

1 Can Of Fat Free Mushroom Soup

2 cups Colby Cheddar (Shredded)

½ cup Skim Milk

¼ cup Fat Free Sour Cream

1 30oz Bag Of Frozen Tater Tots

Directions:

Step 1. Preheat oven to 350’ degrees.

Step 2. Coat a 9×13 casserole dish with non-stick baking spray.

Step 3. In a large skillet add the diced onion, beef, and garlic. Stir to combine.

Step 4. Cook for 5-6 minutes over medium heat. Drain the fat.

Step 5. In a small bowl add the soup, milk, and sour cream, mix to combine.

Step 6. Pour the soup over the meat mixture, to mix to combine. Add the corn, and black beans to the meat mixture, stir to combine.

Step 7. Place a layer of tater tots on the bottom of the casserole dish.

Step 8. Top the tater tots with ½ of the meat mixture. Spread the meat mixture evenly over the tater tots.

Step 9. Top with ½ of the shredded cheese. Repeat the steps.

Step 10. Bake in the oven for 30 – 35 minutes. Remove from the oven and allow to cool.
