Chocolate Chip Chickpea Protein Bites might not be something you would be quick to make but they are so worth it. They are an alternative to a healthy option when it comes to dessert.
They are fun to make together as a family or even make ahead so you can have them to snack on all week. I love making them for friends and family because they are such a tasty snack!
INGREDIENTS
1 Can Chickpeas
¼ Cup Honey
¾ Cup Peanut butter
¼ Cup Chocolate Chips
½ Teaspoon Vanilla
½ Cup Almonds
DIRECTIONS
Prepare a lined tray with parchment paper which will fit in the freezer and set aside.
Process almonds until they are finely crumbed.
Add chickpeas and process until the mixture is combined.
Add peanut butter, honey and vanilla and mix until smooth
Pour mixture into a bowl and add the chocolate chips and stir gently
Roll mixture into small balls and place on the tray you have prepared.
Place the tray in the freezer for 20 minutes prior to serving.
