3 tbsp Olive Oil
1 Yellow Onion (Thinly Diced)
3 Tbsp Butter
4 Tbsp Flour
3 cups Roasted Butternut Squash (Cubed)
2 cups Stock
2 cups Milk
1 cup White Cheddar Cheese (shredded)
Directions:
Step 1. Heat olive oil in a pot over medium heat. Add onion and cook until fragrant, around 6 minutes. Add butter and flour and cook for 3 minutes or until the flour is golden.

Step 2. Add roasted butternut squash, mix with the onion and cook for 3 more minutes.
Step 3. Pour stock, bring to a simmer and cook covered for 15 minutes.
Step 4. Add milk and cheddar cheese and mix until thick and creamy.
