Ingredients
  

  • 3 Tbsp olive oil
  • 1 Yellow onion thinly diced
  • 3 Tbsp butter
  • 4 Tbsp flour
  • 3 Cups roasted butternut squash cubed
  • 2 Cups stock
  • 2 Cups milk
  • 1 Cup white cheddar cheese shredded

Instructions
 

  • Heat olive oil in a pot over medium heat. Add onion and cook until fragrant, around 6 minutes. Add butter and flour and cook for 3 minutes or until the flour is golden.
  • Add roasted butternut squash, mix with the onion and cook for 3 more minutes.
  • Pour stock, bring to a simmer and cook covered for 15 minutes.
  • Add milk and cheddar cheese and mix until thick and creamy.
