Big Boy’s Fresh Strawberry Pie

Welcome back, everyone!

Have you ever enjoyed that greasy and oh-so-yummy fast food from Big Boy restaurants? These restaurants are regional to the west coast and northern part of the states. We had the pleasure of enjoying it once and it was so good that it inspired us to replicate their strawberry pie. So without further ado, let’s introduce the Big Boy’s Fresh Strawberry Pie. 

The reason we loved it so much is the flavor tastes homemade and not as if it came right out of a freezer as you would expect from a fast-food chain.

Big Boy’s Fresh Strawberry Pie should be moved to the top of your must-make list for summer. If you live near a strawberry field farm, this is your sign to take the kids and go pick some fresh strawberries. This copycat pie uses strawberry jelly as well so if you do go to the farm, grab a fresh jar from there too. You will be blown away at the difference in flavor from store-bought to hand-canned. 

We didn’t add any crazy ingredients, just the classics your grandma would have used for her summer baking. All you need to do is follow the directions and let your pie cool on the window sill to transcend yourself to that nostalgic feeling. 

Can I use frozen strawberries if I have some?

Frozen strawberries are best used for frozen desserts or smoothies. When you freeze fruits they do not hold their shape once they thaw out and become quite mushy. We want your strawberries to hold their shape so each bite has a juicy flavor without tasting watered down. Whether you pick them fresh, go to a local farmers market, or buy a pack at the grocery store; use those in this recipe and not frozen strawberries. 

Ingredients:

1 frozen pie crust

1 1/4 cup sugar

3 tbsp cornstarch

1 1/4 cups water

3 tbsp strawberry jelly

2 cups strawberries, sliced

Instructions :

Bake frozen pie crust according to the directions on the package. Remove from oven and allow to cool for 30 minutes. 

Meanwhile, in a small saucepan over medium heat, whisk together sugar, cornstarch and water. Bring to a boil, then reduce heat and simmer for 5 or so minute, until thickened.

Whisk in strawberry jelly. Remove from heat and set aside to cool. 

Add strawberries to the cooled pie crust, then pour over strawberry jelly mixture. Refrigerate for a few hours until set.

Slice, top with ice cream or cool whip, and serve!

A copycat of the Big Boy Strawberry Pie made with fresh strawberries and a super sweet and tangy summer flavor.

Ingredients
  

  • 1 frozen pie crust
  • 1 1/4 cup sugar

  • 1 1/4 cups water

  • 2 cups strawberries sliced
