Avocado Tacos are on the menu today, and I changed up the taco Tuesday game.
I don’t think I’ve heard of someone who doesn’t like tacos. There is so much to enjoy! Mainly because you can customize it to your pallet with all the toppings, you want. This recipe is smooth and creamy, with a slight spicey addition from the seasoning. Avocado is super nutritious for you! Everything from potassium to fiber and healthy fats; it’s one of the favorite ingredients among keto diet followers. The flavor is mild so you can kick up the spice level to your preference.
In under 30 minutes, you can have four perfect keto tacos ready to serve! These are also really good for a snack or lunch on the go.
How can I tell if my avocado is ready?
I have been impatient and tried to cut into an avocado before it was ready. If your avocado is green, it’s not ripe enough. Another test you can try is pushing lightly on the skin to see if it has any give. You can lightly press on all sides, which is another good sign that the avocado is ripe and ready. A fun trick is to pull off the exocarp (the hard part on top where it was pulled from the tree) and see what the color looks like. If it’s bright green, let it be; if it’s light green, it’s ready to eat; and if it’s brown, your avocado is overripe.
If you want to use more toppings or different ones, don’t let us stop you! Tacos are made to be customized to you, so make them spicier or milder if you want.
Ingredients:
1 lb. Ground beef
1 Packet of taco seasoning
½ Onion chopped
1 C. Shredded taco blend cheese
4 Tbsp. Sour cream
4 Tbsp. Salsa
¼ C. Green onions chopped
2 Ripe avocados
Instructions:
Heat the ground beef and onion in a skillet over medium-high heat on the stove. Cook until the meat is completely browned and the onions have softened.

Drain any excess fat from the skillet.
Sprinkle in the taco seasoning and stir the meat to combine.
Cut the avocados in half lengthwise and remove the pit.
Scoop out the flesh from the inside of the avocados.
Fill the avocado shells with the taco meat and top with shredded cheese, sour cream and salsa.
Add green onions for garnish before serving.
Serve and enjoy!
