Tator Tot Casserole

Hey there everyone!

Have you ever tried breakfast for dinner? If not, you are missing out! Breakfast food is typically something we eat on the go with our busy schedules, but when we have a lazy weekend; all the carbs come out and force us to spend the day on the couch. Buttery and oily food isn’t the best for you, but that’s what makes it taste better, right?

The recipe we have for you today is one that definitely can be served at any time of the day. It’s also a casserole-style dish so it makes for a great addition to your brunch table if hosting the girls over for a Sunday brunch. The heaviness of the ingredients will certainly counteract all the mimosas being poured :-). 

Tator Tot Casserole is a recipe that you need to add to your recipe book because the texture of flavors makes for an unbelievably easy meal to whip up and serve to the masses. 

Tator tots are bite-sized pieces of shredded potatoes with a crunchy and crispy outer layer that has a very sweet flavor. Not only are they amazingly tasty but they are easy to heat up because they come premade! What could be easier?

Now, let’s talk about the ground beef base. We have ground beef, corn, nacho cheese (who can resist that?!), and taco seasoning. The nacho cheese keeps everything super moist so you don’t have to worry about your filling drying out during baking. 

Top with shredded cheese for an extra gooey layer, it also works as a glue to keep your Tater Tot Casserole together!

Can I use another type of protein?

If you prefer using ground turkey or ground chicken then you certainly can! Make sure to include extra seasoning and a little bit of water to keep it moist during baking. These meats tend to have a dryer consistency so give them a little extra TLC. 

Ingredients:

2 lbs. Ground beef

1 Package taco seasoning

1 Can corn drained

1 Can nacho cheese soup

32 oz. Bag frozen tater tots

1 ½ C. Shredded cheddar cheese

Instructions:

Preheat the oven to 350 degrees. 

Add the ground beef to a large skillet over medium high heat on the stove, and saute until the meat is completely browned. Drain any excess fat. 

Reduce the heat to low and stir in the taco seasoning. Saute for 2-3 minutes. 

Stir in the corn and soup to combine. Continue to cook for a minute or two.

Pour the meat mixture into the bottom of a well-greased 9×13 baking dish. 

Top the mixture with the tater tots in an even layer.

Remove from the oven, top with the shredded cheese and bake for an additional 5 minutes, or until the cheese has melted.
