Avocado Tacos

This keto-friendly taco is made in a halved avocado with the same delicious flavors you love from your traditional taco, but without the carbs. Topped with ground beef, salsa, sour cream, and chives for a savory meal you can enjoy on the go.

Ingredients
  

  • 1 lb. Ground beef
  • 1 Packet of taco seasoning
  • ½ Onion chopped
  • 1 C. Shredded taco blend cheese
  • 4 Tbsp. Sour cream
  • 4 Tbsp. Salsa
  • ¼ C. Green onions chopped
  • 2 Ripe avocados

Method
 

  1. Heat the ground beef and onion in a skillet over medium high heat on the stove. Cook until the meat is completely browned and the onions have softened. 
  2. Drain any excess fat from the skillet. 
  3. Sprinkle in the taco seasoning and stir the meat to combine. 
  4. Cut the avocados in half lengthwise and remove the pit. 
  5. Scoop out the flesh from the inside of the avocados. 
  6. Fill the avocado shells with the taco meat and top with shredded cheese, sour cream and salsa. 
  7. Add green onions for garnish before serving.
