Storage Instructions:
Leftovers will be fine for a couple of days if kept in an airtight container in the fridge. If you cooked the chicken fresh instead of using leftover chicken, this can stretch to 3 days.
Variations and Substitutions:
You might like to swap the mashed potatoes for roasted potatoes or, for a complete change of pace, egg noodles! Add green beans, mushrooms, peas, celery, or carrots to the potatoes for extra nutrients, or mix some cheddar cheese or sour cream into the hot mashed potatoes to dial up the comfort food factor. You can even swap the chicken for turkey. Shredding either one is easy enough – use the paddle attachment of a stand mixer, but use it on a low setting, as the high one will pulverize the chicken and also fling it all over the kitchen!
