Can I add other ingredients to my Fajitas?
The sky is the limit when it comes to creating your own personal touch to this meal. You can add extra ingredients to what we list in the recipe, or even include something new. Some options that go well are black beans, shredded cheese (add that on last so the cheese melts in a perfect layer over your fajitas), or kick it up with some spicier peppers.
What condiments and sides do you recommend?
There is nothing better than a spicy and sizzling fajita with cool sour cream, homemade (or store-bought) avocado, or your preferred salsa or dip. These fajitas go into a tortilla so if you are a carb fan then include some white or Mexican rice to make as a side to your main course.

Here is what you need to make your Sheet Pan Chicken Fajitas
1 lb. of boneless, skinless chicken thighs
3 bell peppers (1 green, 1 red, 1 yellow, optional)
1 medium yellow onion
Salt
Pepper
1 pkg of 8 small flour tortillas
Optional – 1 lime
Optional – Fresh cilantro
Chicken Broth
Butter
Homemade Fajita Seasoning:
1 Tbsp of chili powder
1 Tbsp of cumin
1 Tbsp of paprika
1/2 tsp of oregano
1 tsp onion powder
1 tsp garlic powder
Let’s start building your Sheet Pan Chicken Fajitas!
Preheat the oven to 425 degrees.
Prepare a sheet pan with parchment paper. (Aluminum foil or the sheet pan itself also works. Just be sure to spray with non-stick spray.)
In a small bowl, mix everything for the homemade fajita seasoning. Set aside.
Thinly slice the chicken thighs into fajita size slices. Season with salt and pepper. Then add HALF of the fajita seasoning, coating all of the chicken well. Place the chicken on one side of the sheet pan.

Combine Chicken Broth and Butter in a pan

Thinly slice all 3 bell peppers (optional) and the onion. Place each in a row on the sheet pan. Drizzle the vegetables with olive oil and coat with the remaining fajita seasoning.

Now mix everything together, the chicken and vegetables.
Add vegetables and chicken to the sauce
Bake for 20 minutes.
Remove from the oven and enjoy on flour tortillas! You can add the juice of 1 lime and sprinkle with fresh cilantro for some extra flavor.
