Can I make this One Pot Mexican Rice Casserole any healthier?
There are a few ingredients you can easily swap out to give this recipe a healthier appeal to someone who is trying to make better food choices. First off, swap out the white rice for brown rice. Brown rice is high in fiber, magnesium, and a ton of other amazing nutrients your body needs. White rice has artificial nutrients which obviously is nowhere near as healthy for you. A second option you can try is switching out your ground beef for either ground turkey or chicken. Obviously, it will have a slightly different taste and texture but both of those meats are leaner with less fat content.
