New Way to Serve Potatoes

The best potatoes type to use

This recipe is pretty versatile, and you can use pretty much any kind of potatoes you like. Red potatoes are great, and you can leave the skin on them. Or you can go for something like russet or Yukon gold for a more traditional result.

Make ahead

Prepare and mash the potatoes in the muffin tin and bake as directed. Then let them cool and remove them from muffin tin. Place in a sealed container and reheat before serving.

Ingredients:

  • Potatoes peeled, cooked and mashed
  • Butter
  • Chopped bacon pieces
  • Green Onion
  • Shredded cheddar cheese
  • Garlic powder
  • Salt and pepper to taste

Instructions:

Step 1. Heat the oven to 375 degrees, and grease 6 sections of a muffin tin well.

Step 2. Mash together the potatoes along with the remaining ingredients.

Step 3. Press the mashed potatoes into the sections of the muffin tin, and bake for 20-25 minutes, or until browned and crispy.

Step 4. Let cool for a few minutes before removing from the muffin tin to serve.

Storing instructions

Store in the fridge for up to 5 days. They should be kept airtight in a sealed container.

Yes, place the mashed new potatoes in a food container that is freezer safe. They will last for up to 2 months. Thaw and reheat before serving.
