Storage Instructions:
Leftovers can be refrigerated for up to 4 days in an airtight container, and you can reheat this chicken casserole in the oven at 350°F for 15 minutes or for a couple of minutes in the microwave. You can also freeze portions of the cooked casserole for up to 3 months.
Variations and Substitutions:
The Ritz crackers can be swapped for Club crackers, regular breadcrumbs, or panko breadcrumbs. You can also use rotisserie or canned chicken to save cooking your own, or even use different meat or even fish – try pork, beef, turkey, or even cod or salmon as the protein. Or, for vegetarians, try beans or tofu (and sub mushroom or celery soup for the chicken soup). Ricotta can be used instead of cottage cheese if you want.
