Meatloaf with Mashed Potatoes and Cheese

Prep Time: 25 minutes | Cook Time: 50-60 minutes | Servings: 6

Ingredients:

Meatloaf:

1 tbsp. Olive Oil (Minced)

3 tsp. Garlic

1 Onion (Chopped)

1 ½ lb. Beef (Ground)

¾ cup Breadcrumbs

¼ cup Tomato Sauce

1 Large Egg

¼ cup Bbq Sauce

½ cup Frozen Peas

¼ cup Fresh Parsley (Chopped)

Salt And Pepper To Taste

For The Potatoes:

4 tbsp. Butter

1 ½ lb. Potatoes Peeled And Cut Into Pieces

¼ cup Heavy Whipping Cream

1 cup Cheddar Cheese (Shredded)

Salt And Pepper To Taste

Instructions:

Step 1. Preheat your oven to 400 degrees.

Step 2. Heat the oil in a skillet over medium temperature.

Step 3. Add the onions to the skillet and saute until tender.

Step 4. Stir in the garlic, and saute another 30 seconds. Remove, and let cool.

Step 5. Add the cooled onion mixture and the rest of the ingredients to a mixing bowl. Knead with your hands until combined.

Step 6. Form the meat into a loaf, and place into a casserole dish. Bake for 30 minutes.

Step 7. Boil the potatoes until tender while the meatloaf is baking.

Step 8. Drain, and mash with the butter, heavy whipping cream and salt and pepper to taste.

Step 9. Top the meatloaf with the mashed potatoes and then the shredded cheese. Bake for 15 more minutes before serving.
