Ingredients:
Salad:
1 cup Lentils (Uncooked)
1 English Cucumber (Minced)
1 Small Red Onion (Diced)
¾ cup Mint Leaves (Chop Well)
½ cup Sun-Dried Tomatoes (Finely Chopped)
Dressing:
3 tbsp Olive Oil
2 tbsp Lemon Juice (Freshly Squeezed)
1 tsp Garlic (Minced)
1 tsp Dijon Mustard
¼ tsp Black Pepper
Pinch Salt
Directions:
Step 1. Add three cups of water and the cup of lentils in a saucepan. Bring to a boil.
Step 2. Once at a boil reduce to a simmer. Cook for 20-25 minutes.
Step 3. Drain the lentils. Rinse the lentils in cold water.
Step 4. Put in a bowl, and transfer them to chill in the refrigerator for an hour.
Step 5. Add the lentils, cucumber, onion, mint leaves, and dried tomatoes in a large bowl.
Step 6. Mix until well blended. Set aside.
Sauce:
Step 1. Add olive oil, lemon juice, garlic, mustard, pepper and salt in a small bowl. Whisk to mix well.
Step 2. Pour the sauce over the ingredients in the salad bowl. Stir to mix.
Step 3. Serve chilled. Divide into four servings.
