Ingredients:
3 large Zucchinis
½ tsp. Garlic Powder
½ tsp. Italian Seasoning
1 tbsp. Olive Oil
1 lb. Ground Beef
1 large Egg
2 tsp. Garlic (Minced)
¼ tsp. Parsley (Chopped)
1 tbsp. Olive Oil
2 cups. Marinara Sauce
1 cup. Mozzarella Cheese (Shredded)
½ cup. Grated Parmesan Cheese
Salt And Pepper To Taste
Instructions:
Step 1. Preheat the oven to 350 degrees.
Step 2. Cut the zucchinis in half lengthwise, and remove the seeds and flesh from the center of each one, to hollow them out like a boat.
Step 3. Coat the zucchini in 1 tbsp of olive oil, the garlic powder, Italian seasoning and salt and pepper to taste.
Step 4. Place the zucchini in a 9×13 baking dish, and bake for 12 minutes.
Step 5. While the zucchini is baking, mix together the ground beef, minced garlic, egg, parsley and salt and pepper to taste in a bowl. Knead with your hands to combine.

Step 6. Form the meat mixture into 20-24 evenly sized meatballs. Heat 1 tbsp olive oil in a skillet over medium-high heat.
Step 7. Brown the meatballs on both sides for 2 minutes each side. Reduce the heat to medium and add in the marinara sauce.
Step 8. Simmer the meatballs in the sauce for 10 minutes. Fill the zucchini boats with the meatballs and sauce.
Step 9. Top with the mozzarella cheese. Turn the oven to broil, and cook the boats until the cheese has melted.
