- Shredded parmesan
- Black pepper
- Fresh parsley
- Minced garlic cloves
- BBQ sauce
- Grape jelly
How to make Macaroni Cheese Stuffed Meatloaf:
Preheat the oven to 350°F.
Line a baking sheet with foil and spray with nonstick spray.
Mix together the beef, breadcrumbs, onion, eggs, garlic, parsley, BBQ sauce, salt, and pepper.
Knead well and shape about half of the mixture into a loaf shape about 8 by 4 inches in size on the baking sheet.
Press down the middle to make a cavity but don’t leave the sides less that an inch thick.
Mix the mac and cheese with the mozzarella and use this to stuff the meatloaf.
Top with the rest of the meat mixture and pinch the sides closed to enclose the filling.
Bake for 40 minutes.
Turn the oven up to 400°F.
Mix the topping ingredients together and brush or pour this sauce over the meatloaf.
Bake for another 10 or 15 minutes or until cooked through.
Let it sit for 10 minutes and then slice and serve.

Macaroni Cheese Stuffed Meatloaf
- 2 pounds ground pork
- ½ cup shredded parmesan
- 1 beaten egg
- 2 teaspoons salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- ½ cup fine dry breadcrumbs
- ½ cup milk
- ¼ cup finely chopped onion
- 2 minced garlic cloves
- ⅓ cup honey
- 1 cup BBQ sauce
- ⅓ cup grape jelly
- Preheat the oven to 350°F.
- Mix the meat with the egg, parmesan, parsley, salt, and black pepper until just combined.
- Mix the milk with the onion, garlic and breadcrumbs in another bowl.
- Now, mix the meat mixture and milk mixture together, without over-working it.
- Shape into meatballs and arrange in a greased 8-inch square baking pan.
- Bake for 15 minutes or until the meatballs are crisp on the outside.
- Mix the honey, BBQ sauce and grape jelly together in a bowl.
- Pour the BBQ sauce mixture over the meatballs.
- Use foil to cover the dish and bake for another 15 minutes.
- When the meatballs are 165°F in the center, the dish is done.
Keep leftovers in an airtight container and eat within a few days.

You can use any kind of BBQ sauce in the topping, and use any other brand of mac and cheese. If you have another meatloaf recipe you usually use, feel free to make that one instead. Any meatloaf recipe can be stuffed with mac and cheese.
