Want to do something good this weekend? So do I.
So, let’s make a pact, eh? Let’s you and I put a fresh batch of chocolate waffles into the griddle. Then, let’s do something incredible with ourselves.
I’m going to give you some inspiration, from a source that has recently prompted me to get myself busy doing good.
I have this friend, Ruth Williams. Our husband’s have the same job and we get to meet up with each other at a yearly workshop. I’m always glad when I get to meet up with Ruth because she’s blonde and gorgeous, with lipstick that never fades, and an English accent to boot. She’s real and warm and totally fantastic. You’d love her.
So, five years ago, Ruth read a story about the work Somaly Mam is doing to save young girls from the Cambodian sex trade. “I don’t normally like to read that sort of thing, it’s too difficult,” she said, “but something about the five year old girl in this story just struck me.” She wrote Somaly, wondering if there was something small she could do to help. When she recieved a reply, Ruth was surprised. She hadn’t actually expected a reply. Somaly invited her to send a small gift to little Srey Mach, the child she’d read about in the article. She’s still sending small gifts and letters to Srey Mach today, and has pulled together a group of women who have adopted other girls in similar situations. “These girls that are saved from slavery, they don’t have mother’s. These little monthly packages are a way for the girls to feel a mother’s love,” says my Ruth friend.

Don’t be shy. Email her the heck away. That would be a really, really good thing to do this weekend.
Of course, your heart may move you in a different direction. Perhaps you’ll have another twinkle of inspiration, an opportunity to make good happen somewhere else, for someone else. Whatever it is. Do it.

Hot Chocolate Melty Marshmallow Waffles
Ingredients
FOR THE HOT CHOCOLATE WAFFLES:
- 3/4 cups white whole wheat flour
- 3/4 cup oat flour
- 1/2 cup cocoa powder
- 2 tablespoons sugar
- 2 eggs
- 3 tablespoons butter melted
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch salt
- 1- 1 1/2 cups milk
FOR THE VANILLA BEAN CREME SYRUP:
- 3 tablespoons butter
- 1 cup half-and-half
- 2 cups sugar
- seeds scraped from 1/2 vanilla pod or 2 teaspoons vanilla extract
FOR THE TOPPINGS:
- 1 1/2 cup mini marshmallows
- 1/2 cup jumbo chocolate chips
Instructions
FOR THE HOT CHOCOLATE WAFFLES:
- In a large bowl, beat together all ingredients for the waffles until smooth.
- Add enough milk to make the batter fairly thin, but not super runny. It shouldn't be thick and bloppy.
- Spoon into a hot waffle iron & bake according to mannufacturer instructions.
FOR THE VANILLA BEAN CREME SYRUP:
- In a large saucepan, combine all ingredients.
- Heat over medium high heat, stirring constantly until steaming hot.
- Spoon over fresh waffles, topped with mini marshmallows and chocolate chips.
- The syrup should be hot enough to melt the marshmallows & chocolate chips, so shy away from having it pretty danged steamy.
