Garlic Parmesan Roasted Potatoes

Garlic Parmesan Roasted Potatoes

Ingredients:

1 ½ lbs.Baby Red Potatoes (Cut In Half)

½ lbs. Baby Golden Potatoes (Cut In Half)

tbsp Olive Oil

½ tsp Garlic 1 Tsp Dried Thyme (Minced)

½ tsp Oregano (Dried)

½ tsp Basil (Dried)

⅓ cups Parmesan (Shredded)

Kosher Salt/ Black Pepper To Taste

tbsp Unsalted Butter

2 tbsp Fresh Parsley Leaves (Chopped)

Directions:

Step 1. Preheat oven to 400 degrees.

Step 2. Line a baking sheet with nonstick baking spray. Chop both baby red and golden potatoes in half. Set aside.

Step 3. Add the red and golden potatoes in a large bowl.

Step 4. Drizzle olive oil, garlic, thyme,oregano, basil and parmesan over the potatoes.

Step 5. Season with salt and pepper. Toss.

Step 6. Transfer the potatoes onto the prepared baking sheet. Arrange the potatoes in a single layer with the skin side up. Bake at 400 degrees for 15 minutes.

Step 7. Remove from the oven and flip the potatoes so that the skin side is facing down.

Step 8. Return the potatoes to the oven at 400 degrees for an additional 15 minutes.
