What type of chicken is used in this recipe?
The easiest thing to do is purchase a pre-cooked rotisserie chicken from your local grocery store. You can use a shredder or two forks to pull apart the chicken to add to your casserole. Dark meat is more moist and flavorful but you can use whatever pieces you prefer. If you have the time you could roast your own small chicken or cornish hen and season to your liking.
How do you reheat Creamy Chicken and Rice Casserole?
Cut a slice and either place it into your oven or toaster oven. Add a tiny bit of water to the bottom of the pan to bring life back to the rice so it does not dry out. The cheese will be remelted further into your casserole to cover each piece of chicken.

1 Box rice a Roni chicken flavor
4 C. Shredded chicken (Either Dark or White Meat)
1 Can cream of onion soup (You can use Cream of Chicken too)
8 oz. Sour cream
2 C. Shredded cheddar cheese
French fried onions for garnish (optional)

Cook the Rice a Roni according to the package instructions.
Stir the soup and sour cream into the rice.
