What you need to make Cowboy Meatloaf and Potato Casserole:
1 Package Refrigerated Premade Potatoes (Mashed)
1 lb. Beef (Ground)
¼ cup BBQ Sauce
½ Large Onion (Chopped)
⅓ cup Bread Crumbs
1 Large Egg
1 cup Bacon Pieces
2 tsp. Chili Powder
1 cup Mexican Blend Cheese (Shredded)
Salt And Pepper To Taste

What you need to make this Cowboy Meatloaf and Potato Casserole:
Step 1. Preheat your oven to 375 degrees.
Step 2. Place the ground beef, bbq sauce, bread crumbs, onion, egg, chili powder and salt and pepper in a mixing bowl, and blend until well combined.
Step 3. Layer the meat in the bottom of a well greased 9×9 baking dish.
Step 4. Bake for 20-25 minutes and drain excess grease.
Step 5. Prepare the mashed potatoes according to the package and spread over the meat mixture.
Step 6. Sprinkle the cheese on top of the potatoes.
Step 7. Add the bacon on top of the mixture.
Step 8. Broil for 3-5 minutes until the cheese has melted.
