That’s right – instead of serving roasted chicken with vegetables and stuffing, the whole thing comes together in one baking dish of deliciousness! The casserole is richly flavored, creamy and ideal or any occasion.

It’s a breeze to prepare and all of the ingredients should be easy to get. There are of course various tweaks and changes you can make, to fine-tune this creamy chicken casserole to your palate. You can use another protein, another kind of soup, or even swap the broccoli for another vegetable.

Ingredients:

  • Chicken breasts
  • Minced garlic cloves
  • Sour cream
  • Chicken broth
  • Onion
  • Cream of chicken soup
  • Broccoli florets
  • Butter
  • Herb-flavored stuffing mix

How to make Company Chicken Casserole:

Put the chicken broth, onion and garlic in a pan, add the chicken and bring to a boil.

Turn the heat right down and simmer gently for 20 minutes.

Take out the chicken and shred it.

Heat the oven to 350°F.

Melt the butter and pour it over the stuffing mix in a pot.

Combine the sour cream with the chicken broth mixture, and blend in the soup with a mixer.

Put the stuffing mix in a casserole dish and the shredded chicken on top.

Add the broccoli.

Pour the soup mixture on top of that, followed by some stuffing mix.

Bake for 30 minutes, then serve hot.

  • 4 boneless skinless chicken breasts

  • 1 pint sour cream
  • 1 cup chicken broth
  • 1 small onion in wedges
  • 1 can cream of chicken soup
  • 8 ounces thawed broccoli florets
  • 4 tablespoons butter
  • 4 cups herb-flavored stuffing mix

Instructions
 

  • Put the chicken broth, onion and garlic in a pan, add the chicken and bring to a boil.

Swap the broccoli for another type of vegetable if you prefer, perhaps mushrooms, peas or carrots.
