I got a tremendous giggle out of the following comment, left Monday by Lisa Loo on the Mango Chicken Salad post, which included a shot of the simple cinnamon-sugar tortilla stars we whipped up for our Labor Day menu…
Am I super stupid not to know how to make those FABULOUS stars and yet want
DESPERATELY to make them?!
I hadn’t planned on posting this recipe, because it’s really more of a clever serving idea than it is an actual recipe. But, I’ll do anything for a reader who makes me gut giggle for five minutes straight. Lisa Loo {you cutie!}, this one’s for you.
Cinnamon Sugar Tortilla Stars
A whimsical addition to our Caribbean themed Labor Day menu plans, these simple tortilla stars were the first thing to disappear from the dinner table. My children adored them. So did my husband. I’m pretty sure he kissed one and made a wish before eating one. Or, maybe I was the one who did that. Because, pretty much, these crunchy chips are the nicest side dish ever.
Ingredients
- 1 package of large tortillas
- 1/2 c. sugar
- 1/2 T. salt
- 1/2 T. cinnamon
- 2 c. vegetable oil for frying
- Medium-sized star-shaped cookie cutter
Instructions
- Using the cookie cutter, cut as many stars as the tortilla’s will allow.
- Heat oil in a medium saucepan, with the stovetop set to medium heat. Once the oil is hot, carefully fry the tortillas on both sides, just until the edges are browned.
- Be careful! They cook fast! Transfer cooked chips to a wire rack while you finish cooking all of the stars.
- When finished, pile the chips in a large bowl, mix together the sugar, salt, and cinnamon, then sprinkle the mixture generously over the cooked chips.
- Serve immediately.
