Using the cookie cutter, cut as many stars as the tortilla’s will allow.
Heat oil in a medium saucepan, with the stovetop set to medium heat. Once the oil is hot, carefully fry the tortillas on both sides, just until the edges are browned.
Be careful! They cook fast! Transfer cooked chips to a wire rack while you finish cooking all of the stars.
When finished, pile the chips in a large bowl, mix together the sugar, salt, and cinnamon, then sprinkle the mixture generously over the cooked chips.
Serve immediately.
