Buffalo Chicken Zucchini Boats

Buffalo Chicken Zucchini Boats

Prep Time: 20 minutes | Cook Time: 20 minutes | Servings: 4

Ingredients:

2 Large Zucchini

2-3 cup Chicken (Shredded)

½ cup Buffalo Sauce

4 oz. Cream Cheese Softened

1 ½ cup Mozzarella Cheese (Shredded)

Green Onions For Garnish (Chopped)

Instructions:

Step 1. Preheat the oven to 400 degrees.

Step 2. In a bowl, mix together the chicken, cream cheese, buffalo sauce and ½ cup of the mozzarella cheese until well blended.

Step 3. Cut the zucchini in half lengthwise, and scoop out the seeds and flesh from the center of each half.

Step 4. Stuff the zucchini boats with the shredded chicken mixture.

Step 5. Place the boats in a 9×13 baking dish.

Step 6. Top with the shredded mozzarella and bake for 20 minutes.

Step 7. Serve garnished with green onions.
