Method
- Preheat the oven to 400 degrees.
- In a bowl, mix together the chicken, cream cheese, buffalo sauce and ½ cup of the mozzarella cheese until well blended.
- Cut the zucchini in half lengthwise, and scoop out the seeds and flesh from the center of each half.
- Stuff the zucchini boats with the shredded chicken mixture.
- Place the boats in a 9x13 baking dish.
- Top with the shredded mozzarella and bake for 20 minutes.
- Serve garnished with green onions.
