With just a few simple steps, you can have a bowl of Beef and Macaroni Soup ready and on the table in under an hour. Grab all the cans and bags of frozen vegetables you have been saving and combine them for the ultimate comfort food.
Can I make this in the slow cooker?
As with any soup or stew, you can easily make this in a crock pot or slow cooker if you want to keep every ingredient fresh and soft. Ensuring that all flavors and seasonings come together for a perfect marriage of flavors. Using a slow cooker or a crock pot makes it so you can start everything (minus the pasta) in the morning and when you get home it’s ready to serve. We recommend making the pasta a few minutes before you are serving it to make sure they hold its shape. Browning the meat is always recommended ahead of adding it to your crock pot. It adds slight crispiness to your beef and holds the flavor on the inside.
If I have other vegetables I want to add, is that okay?
You can use any type of can or frozen vegetables you want! This meal makes for a great cabinet clean-out meal.
Ingredients:
1 lb. Ground beef
½ C. Onion diced
6 C. Beef broth
14 oz. Can diced tomatoes
2 Tbsp. Tomato paste
1 tsp. Worcestershire sauce
½ tsp. Oregano
½ tsp. Dried basil
1 ½ C. Elbow macaroni uncooked
1 ½ C. Frozen mixed vegetables
Salt and pepper to taste
Instructions:
Place the meat and onions in a saucepan over medium-high heat, and cook until the meat is browned and the onions have softened. Drain any excess grease.
Pour in the beef broth, diced tomatoes, tomato paste, Worcestershire sauce, basil, oregano, and salt and pepper to taste. Bring to a boil.
