Method
- Dice the onion.
- Drain and rinse the can of pinto beans, black beans, and corn.
- Add the chicken breast, onion, chicken broth, diced tomatoes, diced green chiles, pinto beans, black beans, corn and taco seasoning into a crockpot.
- Stir well. Place the lid on the crockpot. Cook on low for four hours.
- After cooking for four hours, remove the chicken from the crockpot.
- Use two forks to shred the chicken. Add the shredded chicken back in the crockpot.
- Stir to mix.
- Scoop into bowls for serving.
