Salisbury Steak and Potato Skillet

This recipe is a treat for your tummy as well as friendly to your pocketbook. Making it in a skillet makes a change from the old-fashioned way of making it, keeping the meat separate and preparing the potatoes in a different pan.

Ingredients
  

  • 2 Tbsp. Olive oil
  • 4 tsp. Worcestershire sauce divided
  • 1 lb. Ground beef
  • 1 tsp. Garlic powder divided
  • 1 Onion halved and sliced
  • ¼ tsp. Thyme
  • 4-6 Yukon gold potatoes
  • 3 Tbsp. Cornstarch
  • 3 C. Beef broth divided
  • Salt and pepper to taste
  • 2 Tbsp. Ketchup

Method
 

  1. In a bowl, add the ground beef, 2 tsp worcestershire sauce, ½ tsp garlic powder and salt and pepper to taste. Mix together, and form into 4 patties.
  2. Place the olive oil in a large skillet over medium high heat.
  3. Cook the patties in the heated skillet until browned well on both sides, and then set aside.
  4. Poke holes in the potatoes with a fork, and microwave each one for 5 minutes. Let cool, and then chop into bite-sized cubes.
  5. Place the onions into the skillet, saute until becoming tender. Season with salt and pepper to taste.
  6. Stir the potatoes into the skillet, and pour 2 cups of the broth over them.
  7. Simmer over medium heat for about 5 minutes until the potatoes are tender.
  8. In a bowl, whisk together the remaining broth, cornstarch, ½ tsp garlic powder, 2 tsp worcestershire sauce, thyme, ketchup and salt and pepper to taste.
  9. Pour the mixture into the skillet and simmer until thickened.
  10. Place the patties back into the skillet, and simmer over low heat until cooked through.
