Method
- Preheat the oven to 375 degrees.
- Slice the chicken breasts in half lengthwise to form four servings of chicken.
- Place the chicken in a single layer in the bottom of a baking dish. Add salt and pepper to taste if desired.
- Spread the pesto sauce evenly over the chicken pieces.
- Top the chicken with the spinach, marinated artichoke hearts and tomatoes.
- Sprinkle the parmesan cheese over the casserole.
- Top the mixture with the mozzarella cheese.
- Bake for 35-40 minutes until the chicken is cooked through.
